Spaghetti and Meatballs from SimplyRecipes

Ingredients
Sauce
• 2 Tbsp extra virgin olive oil
• ½ chopped sweet yellow onion
• 3 cloves chopped garlic
• 1 cup very finely chopped carrots
• 1 cup chopped crimini brown mushrooms
• 2 28-oz cans Italian plum tomatoes (get San Marzano brand if possible)
• ¼ cup chopped fresh Italian parsley
• ¼ cup chopped fresh basil
• 3 Tbsp tomato paste concentrate in tube
• ¼ cup grated parmesan-romano cheese blend
• Salt to taste (about 1 teaspoon)
• ¼ cup red wine

Meatballs
• 1 lb ground beef (at least 16% fat)
• ½ lb fresh bulk Italian style pork sausage
• 2 tablespoons finely chopped basil
• 2 tablespoons finely chopped fresh Italian parsley
• ½ cup finely chopped crimini brown mushrooms
• 2 eggs
• ¾ cup unseasoned bread crumbs
• ¼ cup grated parmesan-romano cheese blend
• 2 teaspoons sea salt
• 2 teaspoons fresh ground black pepper
• 1 Tbsp olive oil
• Red wine

Spaghetti
• 1 1/2 lbs dry 100% semolina spaghetti, thin spaghetti, or bucatini

Method
1 Prepare the sauce. Heat olive oil in 4-5 quart pot on medium-high heat. Add onions and cook for 2 minutes. Add garlic and cook for 1 minute. Add carrots and mushrooms, blend together for 2 minutes. Add canned tomatoes, stir together. Add basil and parsley, stir tomatoes with a potato masher until sauce starts to thicken about 5 minutes over medium high heat. Add tomato paste concentrate, stir to blend. Reduce heat and simmer while preparing meat balls, stirring occasionally.

2 Prepare the meatballs. Mix by hand in a large bowl beef, Italian sausage, basil, parsley, mushrooms, eggs, breadcrumbs, cheese, herbed salt, and pepper until well mixed. Use small melon baller, or teaspoons to form 1-inch round meat balls. Roll and compress into tight balls.

3 Heat frying pan on high heat. Add olive oil. Sear and brown meat balls on all sides. About 2-3 minutes. Depending on pan size you may need to brown two batches of the meatballs. Do not crowd the pan by stacking the meatballs. Cook in a single layer. Do not over-cook. As meatballs are finishing, add a little bit of red wine to de-glaze pan.

4 Add ¼ cup red wine to the sauce. Then stir in ¼ cup cheese. Add salt to taste. Add meatballs, gently stir. Simmer sauce and meatballs for 30-45 minutes, stirring occasionally.

5 While the sauce is simmering, bring a large pot with 4 quarts of water in it to a boil. Once the water is boiling, add 1 Tbsp of salt. When the water returns to a boil add the pasta to the pot. Leave the pot uncovered while you cook the pasta on high heat with a vigorous boil. Put a timer on for 8-10 minutes, or whatever your pasta package directions say is appropriate for al dente (cooked but still a little firm). Drain.

To serve, place thin layer of sauce on plate, add pasta, add sauce and meatballs, sprinkle with grated parmesan-romano cheese.

Pork Beef and Black Bean Chili

Ingredients
2 tablespoons olive oil
1 pound ground pork
1 pound ground beef
1 pound chuck steak, fat trimmed, cut into 1-inch cubes
6 garlic cloves, minced
2 cups water
2 tablespoons ground cumin
2 tablespoons chili powder
2 teaspoons dried oregano
2 teaspoons salt
1 teaspoon cayenne pepper
3 6-ounce cans tomato paste
2 teaspoons sugar
3 cups diced fresh tomatoes
3 cups diced onions
3 cups diced red bell peppers
3 cups canned black beans, drained, rinsed (from three 15-ounce cans)
1 cup chopped fresh cilantro
2 3/4 cups (about) beef broth
Grated cheddar cheese

Preparation
Heat olive oil in heavy large pot over medium-high heat. Add ground pork and ground beef and sauté until brown, about 3 minutes. Add cubed beef and garlic and sauté 5 minutes. Add 2 cups water; bring to boil. Add cumin, chili powder, oregano, salt, and cayenne pepper. Reduce heat, cover, and simmer 10 minutes. Add tomato paste and sugar and simmer 5 minutes. Add tomatoes, onions, and peppers and simmer until vegetables are tender, about 30 minutes. Add black beans and cilantro to chili. Add beef broth 3/4 cup at a time, until thinned to desired consistency. (Can be prepared 1 day ahead. Refrigerate uncovered until cold, then cover and keep refrigerated.) Bring chili to simmer. Ladle hot chili into bowls; top with grated cheddar cheese and serve.

My Family's Favorite Sloppy Joes aka Pizza Joes

Ingredients:
1 lb ground beef
2-3 stalks celery, chopped
1 small onion, chopped
1 (8 ounce) can tomato sauce
1/4 cup ketchup
1/4 cup barbecue sauce (your fav, we use Open Pit)
1 tablespoon firmly packed brown sugar
1 teaspoon dry mustard
salt and pepper
1 tablespoon Worcestershire sauce
1 tablespoon vinegar

Directions:
1. In a large skillet, brown ground beef, celery and onion.
2. Drain the fat, who needs it?
3. Stir in remaining ingredients, simmer covered, 15-20 minutes, stirring occasionally.
4. If Joes appear too 'loose', leave cover off and let moisture evaporate.
5. Cook until is the consistency you like for serving on toasted buns, with french fries and cole slaw.

Mom's Chili

Ingredients:
2 lbs hamburger
1 Large 32 oz tomato sauce
then fill can with water 2 times and pour in.
1 Large can crushed tomatoes
OR 1 16 oz can stewed tomatoes and 1 16 oz crushed
Whichever you use then fill the cans with water and pour in
1 package "Brooks" Chili powder.
1 16 oz can red kidney beans
1 handfull of brown sugar
Couple dashes of salt and pepper

Directions:
After this cooks for a while then I add in the spaghetti. You can cook it separate then add or just put it in the chili after it has cooked for a while and let it cook. I have done it both ways. If you want a smaller pot cause this made my big pot I would just use the small can of tomato sauce with the other 2 small cans of crushed and stewed tomatoes and only HALF of the package of the CHILI pouch. Still put in 2 can of water with the tomato sauce and 1 can of water each with the other 2 cans.

Matt and Chelle's Chili

Ingredients:
1 packet of Brooks chili packet
1 Lb. ground beef
1 pkg elbow noodles( you need about 4 handfuls)
1 vidalia sweet onion,chopped
1 can tomato juice use Hunts or Red Gold brand
1 can tomato sauce (the big one)
2 cans diced tomatoes ( oregano,basil,garlic)- on the can already added
1 can diced tomatoes chili ready -on the can **
2 to 3 tsp chili powder if you want just taste it to see how spicy you want
a dash of salt & pepper
chili beans or red kidney beans
(Matt doesn't like beans and it taste just fine without but I like both ways if you like add a can)

Directions:
brown the ground beef & chopped onion: drain fat. In a pot (big) add brooks packet, tomato juice, diced tomatoes, beans, tomato sauce, noodles, salt & pepper, add more chili powder if needed, let it boil then reduce the heat. Simmer for 15 to 20 minutes (check the noodles try not to let them get over done) and enjoy!!!! :)
**and shhhhh don't tell Matt but sometimes I put 1 or 2 pinches of cinnamon in it, Lol!!!

Easy Meatloaf

Ingredients:
1 lb ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg lightly beaten
8 oz's canned diced tomatoes with juice
1/2 cup quick cooking oats (minute quaker instant oatmeal)

Topping (probably want to double):
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard

Directions:
Preheat oven to 375 deg F.
Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.
Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour. (probably 75-80 minutes actually. just check).

Debbie's Crock Pot Chili

Servings: 4-6
Ingredients:

Seasoning Mix:
4 tablespoons chili powder
2 1/2 teaspoons ground coriander
2 1/2 teaspoons ground cumin
1 1/2 teaspoons garlic powder
1 teaspoon oregano
1/2 teaspoon cayenne pepper

The Rest:
1 1/2 lbs ground beef
1 tablespoon minced onion
1 (28 oz) can diced tomatoes
1 (15 oz) can tomato sauce
2 (15 oz) cans kidney beans

Directions:
1. Mix together seasoning mix.
2. Store in an airtight container in a cool, dry place.
3. In a skillet, cook ground beef until no longer pink.
4. Drain.
5. Add onion and 3 tsp of seasoning mix.
6. In Crock-Pot, add tomatoes, tomato sauce, once can of beans and two more teaspoons of seasoning mix.
7. Place the other can of beans in a blender and process until smooth.
8. Add beans and meat to the crock pot.
9. Stir together.
10. Cook on low for 6 to 8 hours.

Crock Pot Vegetable Beef Soup

1 lb. ground beef, browned
1 can corn, drained
1 can green beans, drained
Carrots, diced
Celery, diced
Onion, diced
Potatoes, diced
Salt
Pepper,
1/2 tsp red pepper
1/2 tsp dill
1 bay leaf
1 lg can V-8 juice

Mix in crock pot and cook on low 8 hours.
